Why the Japanese Can Easily Digest Sushi

ScienceDaily (Apr. 13, 2010) — Porphyran, a polysaccharide present in the cell walls of a red algae that is used notably in the preparation of sushi, is broken down specifically by an enzyme called porphyranase. This new enzymatic activity has been identified in marine bacteria and, surprisingly, in the bacteria that populate the gut of the Japanese. Scientists from CNRS and UPMC have explained this discovery by a transfer of genes between the bacteria, that allows the gut microbiota of the Japanese to acquire all the "machinery" it needs to consume the algae that surround sushi.

Their results are published in Nature on April 8, 2010.

Without intestinal flora, humans cannot break down the polysaccharides in their diet, which are one of the principal sources of energy for the brain. Indeed, intestinal bacteria contain enzymes that are known to "break down" polysaccharides (1), which are polymers made up of carbohydrates. They are essential because the human genome is not endowed with such enzymes.

Two research teams working at the Station Biologique in Roscoff (CNRS / UPMC) have been working on porphyranase, an enzyme that breaks down polysaccharides but whose true activity was previously unsuspected. These teams have thus discovered that porphyranase breaks down a highly specific molecule: porphyran, and not another substrate, as had previously been thought (2). Porphyran is a polysaccharide, one of the components in the walls of a red-colored marine algae called Porphyra. These algae are used to prepare Japanese sushi. According to historical documents, this alga has been consumed for many generations by the Japanese (3). Of considerable cultural importance in Japan, it has sometimes served as a gift or to pay certain taxes.

The researchers then demonstrated the process of recognition between the enzyme (porphyranase) and its substrate (porphyran). They were thus able to identify the "signature" of the sequence involved in this recognition (the specific site on the enzyme to which the reagent binds). As expected, this novel enzymatic activity was detected in marine bacteria. Further investigations led the scientists to compare genomic data regarding the gut microbiota of 13 Japanese individuals and 18 North Americans. They thus discovered that porphyranase was also present in the gut microbiota of the Japanese (but not in that of the North Americans).

The scientists suppose that the presence of this enzyme in the gut microbiota of the Japanese is directly linked to their dietary habits. As major consumers of Porphyra for several centuries, the Japanese have thus been in contact with the marine bacteria that contain porphyranases via their diet. Mirjam Czjzek and her team presume that a transfer of genes from marine bacteria to intestinal bacteria must have allowed the microbiota of the Japanese to accept the "machinery" required to break down the polysaccharides in Porphyra algae. These findings suggest that food associated with marine bacteria may constitute a means for the human gut microbiota to acquire new enzymes, which may, among other factors, explain their diversity.

Dolça venjança japonesa

Al Japó, quan t'en vas de viatge, l'etiqueta vol que en tornar portis un お土産 omiyage -petit regal, souvenir- normalment algun producte local (sentit literal dels dos kanjis que el composen) del lloc de destí. No ha de ser res d'extraordinari, simplement un detall com per mostrar que recordaves l'altra persona o per fer-la participar de la teva experiència. Ha de ser un mínim detall, però gairebé obligatori si has d'iniciar una conversa sobre el teu viatge, o fer una sessió de tortura fotogràfica de turista cofoi. Sense el regalet, la mera conversa esdevé difícil d'encetar i es fa una mica estranya: manca formalitat. Jo -els estrangers, ja se sap...- passo bastant d'aquest enuig. Els que coneixeu les meves tendències informals ja sabreu que el tema regalets, aniversaris, ocasions especials i convencions estúpides no són el meu fort. Sí, ja ho sé: Déu n'hi do el país on he anat a petar per ser d'aquesta manera. Res a fer: barra i somriures, i avall. Normalment sempre porto alguna cosa per a algú, però sempre per agraïment, mai per obligació. Aquesta vegada he portat paquetets de pernil i formatge per a tres o quatre persones.
En tenia un per a mi, però...
I si per una vegada...?
Doncs sí, per una vegada y sin que sirva de precedente he fet un omiyage amb tots els ets i uts: pura formalitat, sense cap element de simpatia. He regalat un d'aquests paquets a la meva benvolguda companya de feina, la Tanoka.

Donar-li un paquet de pernil de gla i formatge manxec de primera que podria disfrutar jo, compartint-lo amb la meva Rachael en un d'aquests eterns esmorzars mandrosos de cap de setmana? Donar com a compensació a totes les seves cares llargues de l'any una dosi d'un plaer que no es mereix?
Doncs sí. És el que vaig fer fa un parell de dies. Les raons són dues:
-la primera, estríctament política: si haig de veure-me-les amb aquesta mala puta durant un any més, mirem de fer-ho en els millors termes possibles.
-la segona, més íntima: venjar-me secretament de totes les amargors que em vaig haver d'empassar l'any passat i de les que han de venir enguany.
Estrany? No. La idea és molt japonesa, diria: donar-li un tastet de felicitat que no pugui oblidar, que contrasti amb cada troç de formatge i tall de pernil (i heu de conèixer el que per aquí passa per formatge i per pernil per saber com de gran és aquest contrast) que prengui durant el pròxim any. Que cada vegada que obri la boca per menjar formatge, abans de ficar-hi la peça, hagi de pensar: "Ah! Aquell formatge del Martinez-sensei sí que era bo"; que cada vegada que és al super i compri pernil ho hagi de fer amb la recança de no poder trobar res que s'assembli al pernil de veritat que li vaig permetre de tastar, repassant les lleixes una última vegada després d'haver ficat el seu pernil japonès al carret per si un miracle feia aparèixer un paquet del de gla espanyol. He, he.
La meva pretensió pot semblar exagerada, il·lusòria; no us equivoqueu: el lloc del menjar a la cultura japonesa és molt especial: és un dels pocs vehicles d'expressió hedonista que els són permesos. O més aviat, el menjar és el plaer que els és permès de compartir amb els altres, una forma d'expressió individual alhora social i molt íntima. Quan parlen de menjar és l'únic moment -diria- que pots trobar japonesos compartint experiències de manera emocional. Una altra desviació japonesa. El menjar és important perquè és l'única via d'expressió emocional ben vista en societat.
Per això, si vols fer mal has d'apuntar a la teca. Si d'aquí a uns mesos un petit comentari de la bèstia fa referència al meu regal, prova que se'n recorda, somriuré amb la satisfacció del triomf al camp de batalla.
